a. Why serve specialty coffee in your establishment?
Just like wines, olive oils, and beers, coffees have increasingly conquered the consumer market, which is beginning to appreciate beans with exceptional qualities. Specialty-grade coffees result in complex, aromatic, and naturally sweet beverages, in addition to being more balanced, providing the end consumer with a differentiated experience in the cup.

b. What coffee is classified as specialty?
Specialty Coffees are beans free from impurities and defects that have differentiated sensory attributes. These attributes, which include a clean and sweet beverage, balanced body and acidity, qualify your drink above 80 points in sensory analysis. In addition to intrinsic quality, specialty coffees must have certified traceability and comply with environmental, economic, and social sustainability criteria at all stages of production. In this category, the beans are 100% Arabica and undergo a rigorous selection, and only perfect beans, homogeneous in terms of roast and size, remain in the package. To be a specialty coffee, the packaging needs to have the BSCA (Brazil Specialty Coffee Association) seal to show that the coffee is certified.

c. How is specialty coffee roasted?

The roasting is usually specific and developed according to the variety and sensory profile of each coffee, so we can offer consumers the best that nature offers us. Specialty-grade coffee has subtle notes on the palate and aroma.

d. What is the difference between traditional coffee and specialty coffee?

According to ABIC (Brazilian Coffee Industry Association), traditional coffee can have a high percentage of primary defects, in addition to external elements such as leaves, branches, and insects. For this reason, this coffee is usually roasted dark to camouflage the defects. Furthermore, it is not usually sold as whole beans, only in the roasted and ground version, where external elements mix with the coffee.
